Our jams are called "fruit preparations" because they are below the brix level of 55 imposed by jam regulations (a pretext for calling them Confiture).

By regulation, to be classified as a "jam," a product must contain more than 55% sugar. Recipes with less sugar are called "fruit preparations." These generally have a fruit content of around 50%, while traditional jams have a fruit content of around 35%.
